Bad Butter grew from a personal baking practice into a bakery rooted in connection, experimentation, and a genuine love of making bread. During the pandemic, Chef Daniel Koester began baking from home, sharing his work with the community while refining recipes and returning to favorite creations. What started as “Dan The Baker Chicago” eventually developed into Bad Butter and a brick-and-mortar bakery. The business continues that hands-on spirit through fresh bread and pastries made with care and purpose.
